04 / THE MESQUITE GOSPEL
Questionable restraint. Unofficial doctrine. Very real dinner.
We believe meat deserves heat, smoke, salt, patience, and—when circumstances demand it—something shoved inside it. This is not a church. It is barely a website. But somewhere between the mesquite smoke and the second unnecessary thermometer, a doctrine emerged.
Probe it with conviction. Sear it without apology. Slice against the grain and against the advice of anyone who says “medium-well.”
Inject the shoulder. Anoint the ribs. Stuff the loin. The hog has already committed; the least you can do is show enthusiasm.
Mesquite is not subtle. Neither are we. Control the fire, respect the stall, and quit opening the damn lid every four minutes.
Grinders. Stuffers. Injectors. Vacuum tumblers. Devices purchased after saying, “There has got to be a more complicated way to do this.”
“The flesh is willing. The budget is weak. The Amazon cart, however, knows no restraint.”
